Also known as character malts, specialty malts add colors and flavors to the beer that the base malts can't provide. They are often roasted to varying degrees to give a range of flavors. Character malts can add a little sweetness, caramel flavors, nutty or bready notes, chocolate flavors and aromas, coffee hints and even burnt flavors. These malts can often be steeped in hot water to get these flavors and colors from the grains without needing to be mashed.
