Temperatures affect most aspects of brewing including mashing, lautering, pitching, and fermenting. The only way to ensure proper temperatures is to measure using thermometers. Different types are more suited for specific applications but most will do the job.

Digital thermometers are easy to read and some offer additional features like timers and set-temperature alarms so you can go about your routine without watching.
