Maple syrup typically has a specific gravity between 1.320 and 1.370, which is slightly lighter than the typical gravities of honey: 1.400 to 1.450. As such, when creating recipes from other mead recipes by swapping maple syrup in for some of the honey, you need to use more maple syrup than the honey in the original recipe.
